Fontainebleau Las Vegas – LVCVA & Aer Lingus Irish Fam Trip with ITTN

Tryphavana Cross (LVCVA) and Jenny Rafter (Aer Lingus) are hosting a trade and media trip to Las Vegas to showcase the vibrant city. Travelling with them are Sharon Harney (Cassidy Travel), Mary McKenna (The Travel Suite & Tour America), Peter Cullen (Click & Go), Peter McMinn (Travel Solutions), Caroline O’Brien (Club Travel) and ITTN’s Shane Cullen.

During the four-night trip, the group will be staying at the Fontainebleau Las Vegas.

Fontainebleau Las Vegas

Duran Duran will be at the hotel on the 29th and 30th December and from the end of January, Pitbull will be performing his “Pitbull: Vegas After Dark The Residency” (24th & 25th January, 7th, 8th, 14th and 15th March 2025).

KYU Fontainebleau

KYU was founded in 2016 in the eclectic Wynwood district of Miami. It became TIME magazine’s “Best Restaurant in Florida” one year after opening, and a semifinalist for “Best New Restaurant ” by the James Beard Foundation. KYU now has restaurants in NYC, Mexico and Las Vegas.

Guests love KYU’s sophisticated, bustling atmosphere tucked behind Wynwood’s famous murals, while dining on pristine ingredients, expertly prepared, with bold, inventive, Asian flavors.  

Inspired by the global travels of our team of chefs and the discipline of Japanese wood-fired grilling known as yakiniku, KYU offers a rich exploration of interpretive Asian cooking. The setting offers open kitchens, where diners can savour a world of expertly grilled umami-rich meats, smoke-roasted short ribs, innovative fish and beguiling vegetable preparations, hamachi Crudo, and pork belly baos, and Thai “stone pot” fried rice, along with fabulous hand-crafted cocktails and stunning signature desserts. 

This is dining on a whole other level. Forget 5-star, this is a whole constellation of stars. The entire meal was sublime. 

Starters consisted of kruchy kale, nam price & togarashi; hamachi, crispy rice and wasabi; roasted cauliflower, goat cheese & shishito herb vinaigrette – all out of this world.

Main was beef short ribs as well as pork belly pastrami, bad buns and Japanese miso mustard. These were served with side dishes of stone pot Thai rice; and Japanese sweet potato, buttered black sugar and parmesan – my mouth still waters at the thought.

For dessert, we were treated to dark chocolate smores with banana bourbon ice-cream. Honestly, if you had to have one final meal, this would be it.

It was a very impressive start to a city that promises to impress before you step off the plane and, honestly, it more than delivers.

And Now for a Good Night’s Sleep

The rooms are spacious and elegantly furnished with a subtle art deco theme. The bathroom is vast and I’d happily soak in the tub except I’m in Las Vegas and there is too much to see and do.

The view, however, is something else. My room has a floor to ceiling view of Las Vegas and overlooks the mesmerising Sphere, the graphics alternating and captivating attention throughout the day and night. It is colossal and crystal clear with smooth sophisticated graphics transitioning around the clock.

Winter Wonderland

The group got a sneak peak at the Winter Wonderland offering, located on the third floor of the hotel in the pool area. This comes alive at 5 pm with the Oasis Ice Rink with two rinks spanning 8,000 sqft and an interactive Santa Brunch available for guests.

The six-acre Oasis Pool Deck is transformed into a Winter Wonderland with weekly movie nights, ice skating, fire pits and more. This is open to the public daily up until 5th January with admission tickets, Firepit and Cabana reservations available.
